
I think it’s the end of the line for our peppers this year. George went out last night and gathered what he could before the temperature dropped to nearly freezing. We have quite a few gigantic jalapeños and some beautiful bell peppers, too. The basil had already bolted, and this morning, you could tell the cold gobbled it up. The garden of peppers did not disappoint us this year!

It can be fun thinking of ways to use or preserve the remainder of your harvest. Many times, George will throw the fresh produce in with the chickens. It’s good to give them some chicken-friendly greens, and they love it too.
I will also be giving the guinea pigs and my daughter’s tortoise some bell peppers. They love them very much, and it’s a great source of vitamins for them.
I will make some stuffed jalapeños and maybe even stuffed peppers, too. Do you think we should freeze-dry the rest or dehydrate? Let me know in the comments below.
